There two types of 银耳. Both can be 炖烂. One is a bit crunchy, the other is very soft when they are well cooked. You can use 沙锅, addenough water at the beginning. Use high heat to bring it to boil and reduce the heat to low and cool two hours. Don't buy 被硫磺漂过的。My trick is adding 冰糖 when cooking it.

加了冰糖一起煮就容易粘了,但注意,火不能太大,用大的燉锅,汤在一半或大半的位置,盖着锅盖煮,而且要保持里面的内容一致翻滚。
