枫下家园 / 美食天地 / 今天发面又失败了,郁闷!已经第N次尝试了,馒头,包子全试过,总也做不出白白胖胖的效果。用了干酵母也加了BAKING POWDER,时间水温都差不多,面也发起来了,但蒸好后还是不成功。哪有高手给个详细攻略参考一下!

在面粉里加酵母粉和BAKING POWDER,然后用温水揉面,放在暖气边上发一个小时,把发好的面做成馒头,再醒大概十几分钟,水开下锅蒸,蒸二十分钟,再在锅里闷十分钟出锅,问题究竟出在哪里?

笑母放一勺糖,用不烫手的水调好,加面揉好,盖好放1-1.5小时,然后做包子或慢头,做好后放20分钟,凉水上锅蒸,开锅后争10-15分钟,放10分钟后再开盖.

还有,不要一下就把锅盖子揭开,慢慢放点热气出来,要不馒头表皮会皱起来.

我不是高手。看LG这样作的馒头,味道好,还省时间 - 发面过程都一样,但发面前
就做好馒头,然后发一个小时,直接上锅。少了再醒一遍的时间。还有,没有用BAKING
POWDER

Here is the key point .The key point is to add some sugar (3 TBS) and some salt (2TS) at the same time when you make a dough of 4 cups of flour. It may need 1-4 hours for the dough to rise that depends on which kind of yeast you are using. Sugar is the food for yeast; and the salt will prevent the yeast from over reacting. The over reaction of yeast will make you buns hard.

最简单的办法去WAIMART买个面包机,加水,面,酵母(要在这里买的一粒粒那种),1.2H搞定,都不用下手和面.

外行给你分析一下原因:1。‘第N次尝试‘’可能说明你的酵母开瓶时间太长乐。用新酵母。2。发面加牛奶,馒头肯定白。

用“平常心”说的方法又蒸了一次的馒头,比上次好了一点,但是还是不够软不够白,结果又一次自己毁灭证物了,真是悲哀!(我的酵母和BAKING POWDER都是新的)已经不知浪费了多少面粉做试验了,郁闷!

蒸馒头是这样的:1 发面,不要加什么糖牛奶什么的,除非你喜欢甜一些的;不用也不能等,尤其是包子.yeast能发,就说明yeast没有效2 发好进行二次发酵: 在发好的面里搀入baking powder,如果面软可以加些面粉,把面团揉小揉匀,然后再次发酵,3 发好后直接蒸,蒸好后直接揭锅,没问题.

我每次发面都挺成功的, 你可以试一试我的方法。put yeast(1 table spoon)+sugar(1 tea spoon) into warm water(1 cup), 放5分钟,等yeast发起来了以后,放2.5 cups的白面到搅拌机里,加入1tea spoon的盐和1 table spoon的olive oil. 最后把刚刚的碱水全部倒入,搅拌。 切忌:不要搅拌太长时间,不然的话面会变得很硬。把成品放袋儿里, 然后放在阳光处1~2小时即可
